Joyce is Protestant, not Catholic, so she probably doesn’t believe in transubstantiation. I guess you could also lump Lutheran doctrine (sacramental union) into cannibalism and *maybe* some of the “Holy Mystery”-type doctrines (used by, eg, Anglicans and Methodists)?
Regardless, DoA Joyce is decidedly Evangelical, and it’s safe to assume IW Joyce has similar (albeit more liberal) roots, so odds are good she believes that Christ is only present at communion in a spiritual sense. Eating a ghost does not count as cannibalism.
In nethack, which I take as authoritative on matters like this, eating zombies or other corporeal undead of your race is cannibalism (as well as being a really bad idea even if you’re an orc and don’t care about cannibalism, because they’re always tainted and will give you food poisoning and kill you in a few turns if you don’t cure it), but eating ghosts, wraiths, and other incorporeal undead is not.
